Smoked Spicy Pork Medallions

Prep Time + Cook Time: 1 hour and 45 minutes

Servings: 6

Ingredients

2 lb pork medallions

3/4 cup chicken stock

1/2 cup tomato sauce (organic)

2 Tbs of smoked hot paprika (or to taste)

2 Tbsp of fresh basil finely chopped

1 Tbsp oregano

Salt and pepper to taste

Directions

In a bowl, combine together the chicken stock, tomato sauce, paprika, oregano, salt, and pepper.

Brush generously over the outside of the tenderloin.

Start the pellet grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 250℉ and preheat, lid closed, for 10 to 15 minutes.

Place the pork on the grill grate and smoke until the internal temperature of the pork is at least medium-rare (about 145℉), for 1 1/2 hours.

Let meat rest for 15 minutes and serve.
